CRM 2015 - Custom Opportunity Field

We have a field called "Project Name" on our Opportunity records that Automatically populates using various fields on the Opportunity Record and Contact record (Project Name = <Contact:Last>, <Contact:First> - <Opp:Product Type> - <Opp:Project Type> - <Opp:Project#>). Sometimes all of these fields are filled out, but usually they are not.  There is another checkbox field that allows users to "Override" the name and manually type in their own name. This checkbox works the first time you update it but what I have found is if any of the fields that automatically populate that Project Name field get updated in the future, it ignores that the Checkbox to override is checked wipes out what was manually entered and updates it based on the above, which I DO NOT want it to do.

I cannot find the process where this automatic populating of the field occurs. I also cannot find where the process is for the "Override" checkbox. Basically, if the Override box is checked, than it shouldn't matter if the other fields are updated, they should NOT prompt that field to repopulate.
