Populating custom fields with, or viewing, data from linked records

I'm new to MS Dynamics having been an Admin for 4 years with a differently CRM solution. I'm struggling to find a solution to what should be, I think, a fairly easy problem to overcome: viewing, or reproducing, data held in fields in a related/connected record.

I've a few examples but simplest is (see image below) I want to include contact details (email and phone number) for the owner of a Quote in the MSWord documents we are creating via a template.  I can add the users name (well I think I can, I've not tested that bit yet - it's maybe one of the other "Owner..." fields) but the other fields I need definitely aren't available. My initial attempt to solve this was to create a new field for the Quote entity for this data and then use a calculated field or a workflow to populate them but the functionality of both these methods doesn't allow that.

Another example of the same kind of issue: we have a queue with phone call activities that have been generated from a campaign activity. The queue item "phone call activity" record includes the name of the contact, originally from the marketing list and their phone number but not their company. Again I had thought I could add a new field and pull the account information across (just text would be better than nothing, a clickable link to the record would be ideal) so that I could add that as a column in the view of the queue - but again, no way of doing this.

I'm struggling to believe either of these examples aren't such basic requirements of CRM functionality that I must be missing something, but after days of struggling with it myself, and with the help of our MS partner, I've not uncovered anything.

So... help! Please! A non-code solution would be ideal.
